19.Lunchbox Veggie-Loaded Hummus

INGREDIENTS:

● 1 can chickpeas, drained and rinsed

● ½ cup cooked vegetables (e.g., carrots, peas, bell peppers)

● 2 tablespoons tahini

● 2 tablespoons lemon juice

● 2 tablespoons olive oil

● 1 clove garlic

● Salt and pepper to taste

INSTRUCTIONS:

a) In a food processor, combine the chickpeas, cooked vegetables, tahini, lemon juice, olive oil, garlic, salt, and pepper.

b) Blend until smooth and creamy, adding a little water if needed to reach the desired consistency.

c) Taste and adjust the seasoning if needed.

d) Pack the veggie-loaded hummus in a lunch container with cut-up veggies or pita bread for dipping.
